Ingredients

  • 2 teaspoons vanilla extract
  • ¼ teaspoon coarse kosher salt
  • 4 large eggs
  • ½ vanilla bean
  • ¼ cup dark brown sugar
  • 3 8-ounce packages cream cheese
  • ½ teaspoon coarse kosher salt

    • 1 cup sugar
    • 1 tablespoon all-purpose flour
    • Caramel-Orange Sauce
    • 2 tablespoons water
    • 1 tablespoon orange peel
    • ¼ cup unsalted butter
    • 1 ¾ cups graham cracker crumbs
    • 1 ½ cups organic fresh whole-milk ricotta cheese

Position rack in center of oven; preheat to 350°F. Blend graham cracker crumbs, brown sugar, flour, and coarse salt in processor.
