Ricotta Cheesecake with Fresh Berry Topping

Ingredients

  • 1 tablespoon powdered sugar
  • 4 large eggs
  • ¼ teaspoon salt
  • 4 cups (2 pounds) Homemade Ricotta Cheese
  • Mint sprigs (optional)
  • Cheesecake:
  • 2 tablespoons fresh lemon juice
  • + 9 more ingredients
    • Cooking spray
    • 2 tablespoons granulated sugar
    • 1 pint fresh blueberries
    • 2 teaspoons vanilla extract
    • 1 cup granulated sugar
    • 1 pint fresh raspberries
    • Topping:
    • 1 teaspoon grated lemon rind
    • 2 cups quartered strawberries

Preheat oven to 350°. To prepare cheesecake, place first 5 ingredients in a large bowl; beat with a mixer at medium speed 2 minutes or until smooth.
