Roast Cornish Game Hen with Spring Vegetables

Ingredients

  • ½ cup dry white wine
  • 1 large fresh fennel bulb
  • 1 large leek
  • 1 ½ cups baby carrots
  • 2 teaspoons dried thyme
  • 1 ½ tablespoons olive oil
  • 1 1 1/2-pound Cornish game hen
