Roast Leg of Lamb with Chile-Garlic Sauce
Ingredients
- 1 (1-pound) boneless leg of lamb, trimmed
- Cooking spray
- Sauce:
- 1 tablespoon sambal oelek (ground fresh chile paste)
- ¼ teaspoon ground coriander
- ½ teaspoon ground cumin
- Lamb:

- 1/8 teaspoon salt
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- ½ teaspoon freshly ground black pepper
1. Preheat oven to 425°. 2. To prepare lamb, sprinkle lamb evenly with 3/4 teaspoon salt and pepper. Place lamb on a broiler pan coated with cooking spray.
