Roasted Acorn Squash with Barley and Apple Stuffing

Ingredients

• 2 tablespoon(s) basil - fresh and chopped
• ½ cup(s) walnuts - chopped
• 2 tablespoon(s) maple syrup
• 1 teaspoon(s) cinnamon
• 2 acorn squash
• 2 tablespoon(s) olive oil
• ½ cup(s) apple juice
