Ingredients

  • 2 pounds medium-size fresh asparagus spears, trimmed
  • ½ cup pine nuts, toasted
  • Vegetable cooking spray
  • 1 plum tomato, seeded and chopped

Spray asparagus lightly with cooking spray, and arrange asparagus in an aluminum foil-lined pan. Bake at 425° for 7 minutes. Sprinkle asparagus with pine nuts and tomatoes.
