Roasted Asparagus with Fresh Favas and Morels
Ingredients
- 1 ½ pounds asparagus
- 1 tablespoon Sherry vinegar
- 1 shallot
- ½ ounce dried morel mushrooms
- 3 slices pancetta or bacon
- 1 pound fresh fava beans
- ½ cup water
- + 2 more ingredients

- 2 teaspoons fresh thyme
- 3 tablespoons olive oil
Bring 1/2 cup water to boil in small saucepan. Add mushrooms. Remove from heat. Place shallot in small bowl. Add vinegar. Let mixture stand 30 minutes. Preheat oven to 450°F. Cook favas in large saucepan of boiling salted water until crisp-tender, about 2 minutes. Drain. Rinse under cold water. D...
