Roasted Asparagus with Fresh Favas and Morels

  • 2 teaspoons fresh thyme
  • 3 tablespoons olive oil
  • 1 shallot
  • 1 ½ pounds asparagus
  • 1 pound fresh fava beans
  • ½ ounce dried morel mushrooms
  • 3 slices pancetta or bacon
  • + 2 more ingredients
    • ½ cup water
    • 1 tablespoon Sherry vinegar

Bring 1/2 cup water to boil in small saucepan. Add mushrooms. Remove from heat. Place shallot in small bowl. Add vinegar. Let mixture stand 30 minutes. Preheat oven to 450°F.
