Roasted Asparagus with Orange Vinaigrette

  • 1 tablespoon grated orange rind
  • 2 tablespoons extravirgin olive oil
  • 1 teaspoon sugar
  • 3 tablespoons fresh orange juice
  • 2 tablespoons finely chopped shallots
  • Cooking spray
  • ¼ teaspoon freshly ground black pepper, divided
  • + 2 more ingredients
    • 3 pounds asparagus spears, trimmed
    • 1 teaspoon salt, divided

Preheat oven to 450°. Combine the first 4 ingredients; stir in 1/2 teaspoon salt and 1/8 teaspoon pepper. Set aside. Arrange asparagus in an even layer on a jelly-roll pan coated with cooking spray. Drizzle with oil, and sprinkle with remaining 1/2 teaspoon salt and remaining 1/8 teaspoon pepper....
