Roasted Beet Soup with Crème Fraîche

Ingredients

  • 1 parsley
  • 1 small onion
  • ½ pound red beets
  • 1 ½ teaspoons butter
  • 1 leek
  • ¼ cup whipping cream
  • 1 small bay leaf
  • + 8 more ingredients
    • 1 celery
    • 1/8 teaspoon ground ginger
    • 1/8 teaspoon ground white pepper
    • 1/8 teaspoon ground allspice
    • 1 ½ teaspoons olive oil
    • 2 cups water
    • 2 tablespoons crème fraîche or sour cream
    • 1 fresh thyme

Preheat oven to 350°F. Wrap beets in foil and roast until tender when pierced with fork, about 1 hour. Cool. Peel beets. Cut 1/4 of 1 beet into 1/4-inch cubes; reserve for garnish.
