Roasted Corn and Garlic Chipotle-Cilantro Mashers

Ingredients

  • 1 ½ teaspoons salt
  • 2 pounds red potatoes, cut into 1 1/2- to 2-inch cubes
  • ½ cup butter
  • ¾ cup sour cream
  • 3 medium ears fresh corn
  • 1 garlic bulb
  • 1 teaspoon adobo sauce from can
  • + 5 more ingredients
    • 1 teaspoon pepper
    • ½ cup chopped cilantro
    • 2 tablespoons CRISCO Vegetable Oil, divided
    • 1 canned chipotle pepper in adobo sauce, finely chopped
    • ½ cup milk

1. Cut off pointed end of garlic; place garlic on a piece of aluminum foil, and drizzle with 1 Tbsp. oil. Fold foil to seal. Brush corn with remaining 1 Tbsp. oil, and place on a baking sheet. 2.
