  • 1 tablespoon fresh thyme
  • ¼ cup shallots
  • 2 large yellow bell peppers
  • 3 pounds fingerling potatoes
  • ½ cup fresh parsley
  • ¼ cup Champagne vinegar
  • 1 large red onion
