Roasted Fish on Rosemary

  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 1 (12-ounce) boneless fish fillet, 1 inch thick
  • 1 lemon, thinly sliced
  • 2 teaspoons chopped fresh rosemary
  • 8 sprigs fresh rosemary
  • 1 tablespoon olive oil

Heat oil in a medium nonstick skillet over high heat just until hot. Sprinkle fish with salt and pepper. Sear fish 1 to 2 minutes on each side.
