Ingredients

  • 2 tablespoons light mayonnaise
  • ¼ teaspoon salt
  • ¼ cup (1 ounce) grated fresh Parmesan cheese
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons yellow cornmeal
  • 1 cup warm water (100° to 110°)
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese

    • 1 package dry yeast (about 2 1/4 teaspoons)
    • 2 cups chopped plum tomato (about 9 ounces)
    • ¼ teaspoon sugar
    • 1 whole garlic head
    • 3 cups all-purpose flour (about 13 1/2 ounces), divided
    • ½ cup chopped fresh basil
    • 1 teaspoon salt

Dissolve yeast and sugar in 1 cup warm water in a large bowl; let stand 5 minutes. Lightly spoon flour into dry measuring cups; level with a knife.
