Roasted New Potato Salad 2

Ingredients

  • ¼ teaspoon(s) crumbled dried rosemary
  • Salt and pepper to taste
  • 2 ½ pound(s) medium new red potatoes, scrubbed
  • 5 tablespoon(s) about) olive oil
  • 2 tablespoon(s) white wine vinegar
  • 2 tablespoon(s) Dijon mustard
  • ¼ cup(s) finely chopped shallots
  • + 4 more ingredients
    • 6 clove(s) garlic, chopped (large cloves)
    • 1 teaspoon(s) Salt
    • 1 each(s) ground pepper and crumbled dried thyme (½ teaspoon each)
    • 6 tablespoon(s) olive oil

Combine 6 T. olive oil and seasonings in large bowl. Cut potatoes in eighths. Add to olive oil mixture; toss to coat. Spread in heavy broiler pan.
