Roasted New Potato Salad with Dijon & Rosemary

Ingredients

  • ½ cup chopped scallions (mostly white, with 1 to 2 inches of green)
  • ¼ teaspoon freshly ground black pepper
  • 2 large egg yolks
  • 2 teaspoons dijon mustard
  • 1 tablespoon fresh lemon juice
  • For the Mayonnaise:
  • 1 ½ teaspoons salt
  • + 3 more ingredients
    • 2 tablespoons chopped fresh rosemary leaves
    • 1 cup canola oil
    • 4 pounds red-skinned potatoes

Heat the oven to 400 degrees F. Scrub the potatoes, but leave on the skins. Toss with 2 tablespoons of the canola oil, 1 tablespoon rosemary, and 1 teaspoon salt.
