Roasted New Potatoes with Horseradish and Mustard

Ingredients

  • ½ cup coarse Pommery seed mustard
  • 3 pounds 1 1/2-inch-diameter red-skinned potatoes
  • ¼ cup butter
  • 2/3 cup fresh horseradish
  • 2 tablespoons vegetable oil

Preheat oven to 400°F. Brush 2 large baking sheets with oil. Toss potatoes with 2 tablespoons oil in large bowl. Season with salt and pepper. Spread potatoes on sheets in single layer.
