Roasted Parsnips with Mint

Ingredients

  • ¼ teaspoon freshly ground pepper
  • 7 tablespoons extra virgin olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 6 green onions, cut into 3-inch pieces
  • ½ cup finely chopped fresh mint
  • 2 tablespoons finely chopped shallots
  • 3 tablespoons red wine vinegar

    • 2 pounds parsnips

1. Preheat oven to 400°. Peel parsnips, and cut into 2- to 3-inch-long pieces; cut each lengthwise into 1/3-inch-thick strips.
