Roasted Pepper and Bacon Bruschetta
Ingredients
- 1/3 cup freshly grated Parmigiano-Reggiano cheese
- 1 loaf Italian or French bread, cut in half lengthwise
- 1 tablespoon red wine vinegar
- 6 strips bacon, cooked and finely chopped
- 3 medium red bell peppers
- ¼ cup finely chopped fresh basil
- 2 tablespoons extra-virgin olive oil, divided
