Roasted Pepper and Spinach Penne
Ingredients
- 2 tablespoon pine nuts
- 2 tablespoon capers, drained
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 (7-ounce) jar roasted red pepper, packed in water, drained and sliced
- 1 tablespoon minced garlic

- 1 ½ cup chopped red onion
- ¼ cup olive oil
- 1 (10-ounce) package frozen leaf spinach, thwed and drained
- 1 (16-ounce) package penne (tubular) pasta
