Roasted Pepper and Spinach Penne


  • 2 tablespoon pine nuts
  • 2 tablespoon capers, drained
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 (7-ounce) jar roasted red pepper, packed in water, drained and sliced
  • 1 tablespoon minced garlic
  • + 4 more ingredients
    • 1 ½ cup chopped red onion
    • ¼ cup olive oil
    • 1 (10-ounce) package frozen leaf spinach, thwed and drained
    • 1 (16-ounce) package penne (tubular) pasta

Prepare the pasta according to directions; drain.
