Roasted Pepper Dip

Ingredients

  • ¼ teaspoon pepper
  • ¾ cup boiling water
  • 8 sun-dried tomatoes (packed without oil)
  • ½ cup light sour cream
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • 1 garlic clove, minced
  • + 3 more ingredients
    • 2 tablespoons chopped fresh parsley
    • 3 large red bell peppers
    • 4 ounces light cream cheese, cubed and softened

1. Cut bell peppers in half lengthwise; discard seeds and membranes. Place peppers, skin sides up, on a baking sheet; flatten with hand.
