Roasted Portabella & Garlic Burger

Ingredients

  • 2 medium shallots, finely chopped (to yield about ¼ cup)
  • Freshly ground black pepper
  • 1 head garlic, loose papery skins removed
  • 1 tsp. chopped fresh thyme
  • About 1 Tbs. chopped fresh flat-leaf parsley
  • 4 medium portabellas, stems removed, caps wiped clean with a moist paper towel
  • Kosher salt
  • + 5 more ingredients
    • 1 clove garlic, finely chopped
    • 1 tsp. plus 1 Tbs. olive oil
    • 8 slices country-style bread, about ½-inch thick, or 4 really great quality rolls
    • 2/3 cup grated Monterey Jack
    • 1 Tbs. balsamic vinegar

Heat the oven to 450°F. Lay the garlic on a square of foil. Drizzle 1 tsp. of the olive oil over the top. Bring up the sides of the foil and wrap up the garlic. Roast until tender, about 40 min.
