Roasted Portabella & Garlic Burger

Ingredients
- 2 medium shallots, finely chopped (to yield about ¼ cup)
- 1 tsp. chopped fresh thyme
- Freshly ground black pepper
- 1 Tbs. balsamic vinegar
- 4 medium portabellas, stems removed, caps wiped clean with a moist paper towel
- 1 clove garlic, finely chopped
- 1 head garlic, loose papery skins removed
- + 5 more ingredients

- 2/3 cup grated Monterey Jack
- 1 tsp. plus 1 Tbs. olive oil
- About 1 Tbs. chopped fresh flat-leaf parsley
- 8 slices country-style bread, about ½-inch thick, or 4 really great quality rolls
- Kosher salt
