Roasted Potato Salad with Green Beans, Feta & Mint

Ingredients

  • 1 recipe Simple Roasted Potatoes
  • 1/3 cup chopped fresh mint
  • 1-½ Tbs. fresh lemon juice
  • ¾ lb. green beans, ends trimmed, cut diagonally into 1-½-inch pieces
  • 5 Tbs. extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • ¼ lb. crumbled feta (1 scant cup)
  • + 2 more ingredients
    • Lemon wedges, for garnish (optional)
    • Mint sprigs, for garnish (optional)

Bring a pot of salted water to a boil over high heat. Add the green beans and cook until crisp-tender, 4 to 7 minutes. Drain. Add the green beans and chopped mint to the potatoes and toss.
