Roasted Potatoes with Anchovies and Lemons

Ingredients

  • 1 ½ tablespoons garlic
  • 3 tablespoons extra-virgin olive oil
  • 2 pounds small white boiling potatoes
  • 1/3 cup fresh flat-leaf parsley
  • 1 ½ tablespoons fresh lemon juice
  • ¼ teaspoon black pepper
  • 1 ½ tablespoons minced anchovy fillets
