Roasted Sweet-Potato Spears with Bacon Vinaigrette
Ingredients
- ¼ cup extra-virgin olive oil
- 3 scallions
- 2 tablespoons Sherry vinegar
- ½ pound sliced bacon
- 1 tablespoon water
- 4 pounds medium sweet potatoes
- 1 teaspoon salt
