Roasted Sweet-Potato Spears with Bacon Vinaigrette

Ingredients

  • ¼ cup extra-virgin olive oil
  • 3 scallions
  • 2 tablespoons Sherry vinegar
  • ½ pound sliced bacon
  • 1 tablespoon water
  • 4 pounds medium sweet potatoes
  • 1 teaspoon salt
