Roasted Tomato and Red Pepper Soup with Chilled Mint

Ingredients

  • 2 large garlic cloves
  • 1 teaspoon fresh lemon juice
  • 2 red bell peppers
  • 4 medium tomatoes
  • ¼ teaspoon sugar
  • 2 tablespoons heavy cream
  • 1 ½ teaspoons salt
  • + 5 more ingredients
    • ½ teaspoon ground coriander
    • 1 ½ tablespoons olive oil
    • 1 small onion
    • 2 tablespoons fresh mint
    • ¾ cup water

Preheat broiler. Toss bell peppers, tomatoes, onion, and garlic with oil and coriander in a large roasting pan and broil about 4 inches from heat until edges of vegetables are charred, about 7 minutes.
