Root Beer Pot Roast

Ingredients

• 1 tablespoon vegetable oil
• 1 (12-ounce) bottle root beer (not diet)
• 1 teaspoon pepper, divided
• 1 garlic clove, minced
• 1 (4-pound) eye of round roast
• 1 ½ teaspoons salt, divided
• 1 large onion, thinly sliced

Sprinkle roast evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Brown roast on all sides in hot oil in a large ovenproof Dutch oven over medium-high heat. Add onion. Remove Dutch oven from heat.
