    • 75ml brandy
    • 225ml double cream
    • Small handful of flat-leaf parsley, chopped
    • Olive oil
    • Salt and pepper
    • 450g small Charlotte potatoes, cut in half
    • 2 garlic cloves, peeled
    • 3 sprigs of rosemary
    • 40g salted butter
    • 300g peas, to serve
