Ingredients

  • Ambrosia
  • 2 teaspoons baking powder
  • Cooking spray
  • 2/3 cup stick margarine or butter, softened
  • 1 large egg white
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda

    • 2 cups sugar
    • 1 ¼ cups low-fat buttermilk
    • ½ teaspoon ground ginger
    • ½ teaspoon ground allspice
    • ¼ cup dark rum
    • 1 tablespoon grated orange rind
    • 3 cups all-purpose flour
    • ¼ teaspoon salt
    • 1 teaspoon vanilla extract

Preheat oven to 375°. Beat sugar and margarine at medium speed of a mixer until well-blended (about 5 minutes). Add the eggs and egg white, 1 at a time, beating well after each addition.
