Rum Cakes

Ingredients

  • ¼ cup dark rum
  • 1 teaspoon vanilla extract
  • ¾ cup water
  • 1 cup sugar
  • 1 cup whipped mascarpone, for garnish
  • Blood Orange Marmalade, recipe follows
  • 1 teaspoon sugar
  • + 6 more ingredients
    • Pinch salt
    • 5 tablespoons unsalted butter, softened, plus additional for buttering molds
    • 2 eggs
    • 1 cup all-purpose flour
    • 1/3 cup warm milk
    • 1 tablespoon active dry yeast

1. In a large bowl, dissolve the yeast with the milk. Allow it to proof in a warm place for 10 minutes. Mix in the flour and eggs, beating well until dough is smooth. Cover the bowl, and let rise at room temperature for 45 minutes.
