Rustic Tomato and Ricotta Tart

Ingredients

  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 lemon, zested
  • 8 ounces (2 sticks) cold unsalted butter, cut into pieces
  • 1 large egg plus 1 egg yolk, whisked together
  • 1 cup ricotta
  • 1 egg white
  • + 6 more ingredients
    • 2 tablespoons sugar
    • ½ teaspoon grated lemon zest
    • 6 to 8 ripe plum tomatoes, halved lengthwise, seeded
    • 1 tablespoon honey
    • 2 tablespoons whole milk
    • 1 tablespoon coarse, turbinado, or "raw" sugar
