Rustic Walnut Rapini Pasta
Ingredients
- ½ cup grated Parmesan or Pecorino cheese
- 1 tablespoon lemon zest
- 1 rapini, roughly chopped (about 6 cups)
- ½ pound rigatoni
- 1 cup California walnut halves, toasted
- 4 garlic, minced
- 1 cup sliced red onion

In large skillet, brown sausage meat over medium high heat, breaking up pieces with the back of a spoon. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook 1 minute.
