Salad with Canadian Bacon and Poached Eggs

- 1 tablespoon fresh flat-leaf parsley
- 2 tablespoons shallots
- 1 teaspoon Dijon mustard
- 5 ½ teaspoons red-wine vinegar
- ¼ teaspoon salt
- 4 tablespoons extra-virgin olive oil
