Ingredients

  • 3 cups dry red wine
  • 10 gingersnaps, finely crushed
  • 12 whole peppercorns
  • 1 cup diced celery
  • 1 large onion, sliced
  • 1 (4-pound) chuck roast
  • 1 tablespoon sugar
  • + 6 more ingredients
    • ¾ cup diced carrots
    • ¼ cup all-purpose flour
    • 6 bay leaves
    • ¼ cup plus 2 tablespoons shortening, divided
    • 4 whole cloves
    • 2 teaspoons salt

Place roast in a very large plastic, glass, or stainless steel container. Combine wine, onion, celery, carrots, peppercorns, bay leaves, cloves, and salt; mix well, and pour over roast.
