Sautéed Halibut with Gazpacho Salsa

Ingredients

  • 2 (8-ounce) fillets of Alaskan halibut or any fresh fish available
  • 2 cups salad greens or mixed lettuces
  • ¼ teaspoon pepper
  • Gazpacho Salsa
  • 1 tablespoon olive oil
  • ¼ teaspoon salt

1. Sprinkle fish with salt and pepper. Heat oil in a large skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily with a fork. 2. Place 1 cup salad greens (prepared as described above) on each plate. Serve with Gazpacho Salsa topped with fish.
