Sautéed Rice And Tomatoes

Ingredients

  • 2/3 cup uncooked regular rice
  • ½ cup chopped onion
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 2 large tomatoes, peeled and chopped
  • 1 1/3 cups water
  • ¼ cup vegetable oil

    • ¼ cup bacon drippings

Cook rice in oil in a small cast iron skillet, stirring frequently, until rice is lightly browned. Add water, and bring to a boil. Reduce heat; cover and simmer 20 minutes or until rice is tender.
