Sautéed Sugar Snap Peas & Cucumbers

Ingredients
- ¼ cup thinly sliced mint leaves
- 2 Tbs. canola oil
- ¾ tsp. salt
- 1 Tbs. white-wine vinegar
- ¾ lb. sugar snap peas, trimmed (see How to string a pea pod)
- Freshly ground black pepper to taste
- 1 tsp. sugar

- 2 medium cucumbers, peeled, halved lengthwise, seeded, and thinly sliced
In a large skillet over high heat, heat the oil. Add the snap peas, lower the heat to medium high, and sauté the peas until barely tender, about 3 min.
