Sautéed Sugar Snap Peas & Cucumbers

Ingredients

  • 2 medium cucumbers, peeled, halved lengthwise, seeded, and thinly sliced
  • Freshly ground black pepper to taste
  • ¼ cup thinly sliced mint leaves
  • 1 Tbs. white-wine vinegar
  • 2 Tbs. canola oil
  • ¾ lb. sugar snap peas, trimmed (see How to string a pea pod)
  • 1 tsp. sugar
  • + 1 more ingredients
    • ¾ tsp. salt

In a large skillet over high heat, heat the oil. Add the snap peas, lower the heat to medium high, and sauté the peas until barely tender, about 3 min.
