Savory Blue Cranberry Shortbread with Caramelized Onion Cranberry Jam

Ingredients

• Shortbread:
• 8 ounces crumbled Stilton or Gorgonzola cheese, room temperature
• ½ cup unsalted butter, room temperature
• 1 ½ cups all-purpose flour
• ½ teaspoon kosher salt
• ½ teaspoon black pepper
• ½ cup Ocean Spray® Craisins® Original Dried Cranberries, coarsely chopped

  • ¼ cup butter
  • 1 ½ cups chopped yellow onion
  • 1 cup Ocean Spray® Fresh or Frozen Cranberries
  • ½ cup Ocean Spray® Cranberry Juice Cocktail
  • ¼ cup packed light brown sugar
  • ¼ cup red wine vinegar
  • ¼ cup red wine
  • 1 teaspoon chopped fresh rosemary leaves
  • ½ teaspoon salt

1. TO MAKE SHORTBREAD: Combine cheese and unsalted butter in large mixing bowl with paddle mixer or in food processor bowl; mix or process until creamy.
