Savory Parmesan Pain Perdu with Poached Eggs and Greens

Ingredients

  • 1 cup whole milk
  • 2 teaspoons red-wine vinegar
  • 1 tablespoon unsalted butter
  • 3 cups baby greens
  • 1 tablespoon extra-virgin olive oil
  • ½ cup grated parmesan
  • 6 (1-inch-thick) slices baguette
  • + 2 more ingredients
    • plus a few drops for cooking eggs
    • 3 large eggs

Preheat oven to 400°F with rack in middle. Butter a 1-quart shallow baking dish or a 9-inch pie plate. Arrange bread in 1 layer in dish.
