Ingredients

  • 5 ounces crumbled Gorgonzola cheese (about 2/3 cup)*
  • 3 large eggs
  • 1/8 teaspoon pepper
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon butter or margarine
  • 2 teaspoons brown sugar
  • + 5 more ingredients
    • 1 tablespoon olive oil
    • 2 large onions, cut in half and thinly sliced
    • ½ cup frozen chopped spinach, thawed
    • Garnish: crumbled Gorgonzola cheese
    • 1 ½ cups half-and-half

Drain spinach well, pressing between paper towels to remove excess moisture; set aside. Melt butter in a large skillet over medium heat; add oil and onion, and sauté 5 minutes.
