Savory Sweet Potato Salad


  • 3 pounds sweet potato, cooked, peeled and cubed
  • 1 cup chopped sweet red pepper
  • ½ cup chopped onion
  • 1 ¼ cups mayonnaise
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1/8 teaspoon hot pepper sauce

1. In a large bowl, combine potatoes, red pepper and onion. In a small bowl, blend mayonnaise, salt, pepper and hot pepper sauce. Pour over potato mixture and toss to coat. Cover and refrigerate for at least 1 hour.
