  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • 1 small onion, very thinly sliced
  • 2 tablespoons fresh thyme leaves
  • ¼ cup pine nuts
  • 3 tablespoons lemon juice
  • + 3 more ingredients
    • 1 sheet puff pastry
    • 1/3 cup freshly grated Parmesan
    • 1 ½ cups ricotta cheese

Heat oven to 400° F. In a large bowl, combine the cheeses, lemon juice, salt, pepper, and thyme and mix well.
