Scallop Cakes with Cilantro-Lime Mayonnaise and New Potatoes

Ingredients

  • 1 teaspoon grated lime peel
  • Cilantro-Lime Mayonnaise
  • Buttered New Potatoes with Chives
  • fresh chives
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • ½ cup fresh chives
  • + 10 more ingredients
    • 2 pounds sea scallops
    • 1 tablespoon fresh lime juice
    • 2 tablespoons all purpose flour
    • 1 large egg
    • 1 cup onion
    • 2 tablespoons peanut oil
    • ¾ teaspoon ground black pepper
    • 1 tablespoon fresh ginger
    • 2 tablespoons parsley
    • Fresh cilantro sprigs

Heat olive oil in medium nonstick skillet over medium heat. Add onion and sauté until tender, about 8 minutes. Cool. Place scallops in processor. Using on/off turns, coarsely chop scallops.
