Scalloped Potatoes

Ingredients

  • 2 ½ pounds red potatoes, unpeeled and cut into 1/8" slices
  • 1 shallot, minced
  • ½ teaspoon dried crushed red pepper
  • 1 ½ cups whipping cream
  • 1 cup (4 ounces) shredded Gruyère cheese
  • 1 large clove garlic, minced
  • ½ teaspoon salt

    • 3 tablespoons butter or margarine, melted
    • 1 ¼ cups milk
    • ¼ cup freshly grated Parmesan cheese
    • ¼ teaspoon freshly ground pepper

Cook first 3 ingredients in butter in a Dutch oven over medium heat, stirring constantly, until tender. Add whipping cream and next 3 ingredients; bring to a boil, stirring occasionally.
