Scarborough Fair Tofu Burger

  • freshly ground black pepper
  • 12 ounces extra-firm tofu, drained and pressed
  • 1 cup TVP granules
  • 2 ½ tablespoons ground flaxseed
  • 3 tablespoons water
  • 1 tablespoon dried sage
  • 1 tablespoon dried rosemary
  • + 7 more ingredients
    • ¼ cup hulled pumpkin seeds
    • 1 cup vegetable broth
    • 1 tablespoon dried thyme
    • 1 tablespoon dried parsley
    • salt
    • ¼ cup hulled sunflower seeds
    • 2 tablespoons minced garlic

Grind the parsley, sage, rosemary, and thyme into a fine powder. I use a coffee grinder for this.
