Scott's Holiday Salad

Ingredients

  • ½ cup cold water
  • 2 envelopesplain gelatin
  • 1 cup water
  • ½ cup champagne vinegar or white vinegar
  • 1 cup granulated sugar
  • 1 teaspoon kosher salt
  • 3 cups peeled and seeded cucumber, cut into ¼-inch pieces
  • + 3 more ingredients
    • ½ cup thinly sliced green onions, white and green parts
    • ½ cup celery, cut into ¼-inch pieces
    • Vegetable oil or cooking spray

1. In bowl pour 1/2 cup cold water. Sprinkle the unflavored gelatin over to soften, about 10 minutes.
