Scrumptious Baked Eggs with Tomato Relish


  • 4 eggs
  • 4 tsp tomato relish
  • 2 tsp chives and parsley, chopped
  • ¼ cup gouda cheese, grated (optional)
  • Olive oil spray

1. Preheat oven to 180⁰C. Grease four small oven-proof ramekins using olive oil spray. 2. Crack an egg into each ramekin, then evenly distribute the relish, cheese and herbs over the top. 3. Bake for 6-8 minutes, or until the egg yolk is cooked to your liking. 4. Serve with toast.
