Scrumptious Carrot Cake

Ingredients

  • 1 teaspoon(s) lemon juice or lime juice and some zest
  • 3 ½ cup(s) powdered sugar
  • dash of salt
  • ½ cup(s) butter
  • 1 package(s) cream cheese, softened (8 ounce pkg)
  • Frosting
  • ½ cup(s) raisins
  • + 12 more ingredients
    • ¼ teaspoon(s) nutmeg
    • 1 ½ teaspoon(s) salt
    • 1 cup(s) shredded coconut
    • 1 cup(s) drained, canned, chunky pineapple
    • 2 cup(s) grated carrots
    • 1 cup(s) walnuts cut up
    • 1 teaspoon(s) ground cinnamon
    • 4 eggs
    • 2 teaspoon(s) Baking Soda
    • 2 cup(s) flour + ½ cup for high altitude
    • 1 ½ cup(s) oil
    • 1 pound(s) or 2 ½ cup of Dark Brown Sugar

Beat brown sugar and oil for 3 minutes. Add eggs and beat. Add dry ingredients and beat. Cut up pineapple chunks a little. Add rest of ingredients and mix well.
