Sea Foam Frosting

Ingredients

  • 1 ½ cups firmly packed brown sugar
  • 1 teaspoon almond extract
  • 2 egg whites
  • ½ teaspoon salt
  • ½ cup water

Combine sugar, egg whites (at room temperature), water, and salt in top of double boiler; place over boiling water, and stir constantly until sugar dissolves. Beat on high speed of electric mixer for 7 minutes or until frosting is fluffy and holds soft peaks. Remove from heat; stir in flavoring.
