Seared Scallions with Poached Eggs

Ingredients

  • 2 large eggs
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon fresh lemon juice
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 bunches scallions
