Seared Tuna with Citrus, Tomato & Olive Sauce

Ingredients

  • 4 tuna steaks, 1 inch thick (6 to 7 oz. each)
  • 1 Tbs. black peppercorns
  • Kosher salt and freshly ground black pepper
  • 1 large clove garlic, minced
  • 5 Tbs. extra-virgin olive oil
  • 2 medium plum tomatoes
  • 1 medium lemon
  • + 4 more ingredients
    • 2 Tbs. coriander seeds
    • 2 medium navel oranges
    • 2 anchovy fillets, rinsed and patted dry
    • ½ cup (about 18) pitted Kalamata olives

Cut each tomato into four wedges, cut out the cores, and remove the seeds and pulp. Slice the tomatoes lengthwise into 1/4-inch strips.
